Kufta-bozbash, or simply kyufta, is a dish praised by poets of the Middle East, and more than once - it saturates, warms and invigorates the senses thanks to its recipe verified over the centuries. A strong broth of long-boiled lamb leg is seasoned with minced lamb meatballs, white rice, chickpeas, tomatoes and real saffron, and dried cherry plum and fresh mint add a special flavor to it.
