A dish of five striped mini khinkali, filled with stewed duck meat and finely chopped onions sautéed in butter with Demiglass sauce, black pepper and chicken broth. Khinkali are placed on a mousse of cream and Parmesan, and drizzled with sweet and spicy Hoi-sin sauce.
