Tender low-fat veal is cooked in a cast-iron frying pan in its own juice, with the addition of tomatoes, sweet paprika, garlic, onions and red adzhika. The special aroma and taste of veal is given by shereuli, a traditional Georgian spice with a rich pungent taste and aroma.
