Traditional Uzbek cuisine is a hearty and fresh salad “Yangiyul” (Uzbek: “New Spring”). The salad is based on fresh greenhouse cucumbers, ripe pink tomatoes, sweet bell peppers, chili peppers, a bouquet of aromatic greens, seasoned with vegetable oil and a drop of balsamic vinegar. A generous amount of roasted beef finishes the salad.
