Greciotto is prepared on the basis of green buckwheat, with the addition of garlic, shallots, parmesan and cream. Served with greccotto with thyme fried in vegetable oil, champignons, oyster mushrooms, onions and tender parmesan mousse (cream, parmesan). A poached egg is laid out on top. Garnished with micro greens and green butter.
