Bukhara pilaf, or "Osh-i-sofi", is a complex long-cooked dish. Rice "Alanga", vegetables, onions, a head of young garlic and a juicy chicken thigh fillet stew for a long time over low heat and are saturated with aromas of spices, barberry and saffron. Served with pickles or fresh vegetables of your choice.
