The secret of cicila in Gali, or tapaka cicila, is in its crisp crust. This is an old recipe, transmitted by generations from hostess to mistress: whole chicken is pickled in red acutely sweet ajik and baked in fragrant herbs and spices. Served accompanied by Tkemali sauce.
