Pork shank is marinated in beer with celery, garlic, Svan salt and Abkhazian spices. Then it languishes in a vacuum, before serving, it is coated with red adjika and fried until crisp. Served with pickled peppers, garlic and Georgian cabbage with Satsebeli sauce.
