Fresh tomatoes, cucumbers, carrots, peppers, a mix of salads (arugula, romaine, mache, lollo rosso) are seasoned with Hoisin sauce (black plum sauce). Top duck fillet is laid out (duck is baked with Indian spices until fully cooked), poured with the same sauce and decorated with sesame and cilantro.
